Why is there colored text on each value card?

What impact does demand have on value and trading?
Demand for each item is rated on a scale from 1 to 10. Items rated 1 to 4 have low demand, 5 to 7 have moderate demand, and 8 to 10 have high demand. Lower demand makes it more difficult to find favorable trades for that item.
